Huevos Motuleños

Meet my all time favorite breakfast.  Two years ago the Señor and I were on vacay in Isla Mujeres when we were introduced to Huevos Motuleños. Huevos Motuleños are the perfect combination of sweet and savory. You get a nice kick of spice from the chile serrano, salty goodness from the ham and sweet deliciousness from the plantains. When you combine all of these ingredients you are left with magic.
For two years now we have been reminiscing about our breakfast on that island off the Yucatan Peninsula. The breakfast that changed our lives. Okay, maybe not our lives, but it was amazing. We decided it was time to recreate that one fine dish. We pulled a recipe from Mexico: The Cookbook  and put our own spin on it. 

1. Instead of making the sauce from scratch we used El Pato tomato sauce (2 small cans of the salsa de chile fresco and 1 small can of the salsa de tomate con jalapeños). If you want your dish more spicy you can add another can of the salsa de tomate con jalapeños or add chopped chile serrano as a garnish.

2. We  switched out the ham for some Polish Kielbasa.  
So how was our version of Huevos Motuleños? Wonderful. For now it will satisfy our tastebuds until we can return once more to Isla Mujeres.  Provecho!!

Planning the Drink Menu

We are having lots of fun over here experimenting with potential drinks for the #Dlpchairez wedding. Being that it's Mexa themed, we know that the drink will definitely involve tequila and are all about throwing some Tajin in the mix, and of course needs to be ultra-tasty.  For this drink we just mixed fresh squeezed  limonada with Tajin, which is perfect for all ages and can quickly be made into a cocktail for adults with a splash (or two) of tequila.  These will be nice to have as the guests arrive before the backyard ceremony.  Refreshing and delicious!
Is it a sign?  I think so.  Love is in the air...  And my drink!
What else is on the drink menu?  We are super big fans of micheladas, margaritas and aguas frescas.   We'll offer savory variations of each since we are not sweet drinks kinda people.  As for name ideas? Well, let's just say a Michelada can easily be changed into a Miguelada.

Lola's Cocina: Mango-Papaya Paletas with a Raspberry Twist

Recipe by Lola's Cocina
Ingredients:
4 ripe Manila mangoes peeled and pitted
1/4 medium papaya peeled, deseeded, and roughly chopped
2 limes freshly juiced (I prefer Mexican or key limes)
1/3 cup sugar
1/2 cup water
1 cup fresh raspberries
Preparation:
  1. On the lowest setting possible, blend mangoes, papaya, lime juice, sugar, and water until lightly pureed. Ingredients should be well blended, but I like my mixture to still be slightly chunky.
  2. Pour mixture into popsicle molds.
  3. Add a few raspberries into each mold, pushing them down with a small spoon or stick to ensure that they are distributed evenly throughout the popsicle. I also like to add a single raspberry to the end of each wooden stick before placing it into the popsicle mixture. This helps ensure that the sticks do not move when popsicles are placed in the freezer.
  4. Freeze overnight.

Lola's Cocina: Cucumber Agua Fresca

There is nothing better than agua fresca when the temperature starts to heat up.  And this week it's going to be hot.  Keep yourself hydrated by picking up some cucumbers to make this light and refreshing cucumber goodness from Lola's Cocina.
Ingredients:
3 medium cucumbers
2 Mexican or key limes peeled (optional)
½ cup sugar (or to taste)
8 cups water
Preparation:
  1. Cut off about ½ inch from each end of cucumber. Rub the tips onto the flat ends of cucumber to help remove any bitterness. Discard the tips. Chop cucumbers into large chunks.
  2. Working in batches, blend cucumber, limes, water, and sugar on high for 60 seconds.
  3. Strain through a fine-mesh sieve into large pitcher. You may need to agitate the mixture to let the juice through, avoid pushing through the pulp to keep juice light in consistency. Discard pulp.
  4. Repeat process with remaining ingredients.
  5. Chill and serve over ice. Garnish with lime wedge or cucumber.
Tip: Make it an adult beverage by adding a splash of Tequila or Vodka!

Lola's Cocina: Blood Orange Agua Frecsa

It's time to mix things up in the kitchen and put a twist on the typical morning orange juice. This combination of oranges and lemons is sweet and tangy - perfect for a spicy breakfast of Green Chilaquiles!  Fun tip: Make extra to freeze in popsicle trays for a delicious afternoon treat!

Ingredients:
7 blood oranges freshly squeezed
7 Valencia oranges (the best for juicing) freshly squeezed
1 lemon (I prefer Eureka lemons – the ones with thick skin) freshly squeezed
4 cups water
3/4 cup sugar (or to taste)
Preparation:
  1. Combine all three juices, water, and sugar. Stir very well.
  2. Chill and serve over plenty of ice.

Quesadillas, It's What's for Lunch!

Mondays are my "day off" which just means working on my laptop from home.  Which also means that I tend to eat more than I typically do when I am at the shop.  And today is proving to be one of those days.  What's a girl to do but bust out the leftovers from this weekend and make herself (and her señor) some lunch.  What we came up with was really quite wonderful.  I mean like crazy-yummy-good. Quesadillas filled with kale, sweet potatoes, zucchini, mushrooms and good ol' carne asada.  Here are my easy-peasy tips and musts to make this quesadilla a success.  First, you MUST heat up the tortilla on an open flame. Secondly, I purchased my kale and sweet potato salad at Ralph's - I like to keep it on hand and toss it into pretty much everything we eat (it's healthy and yummy).  Lastly, try to use Oaxacan cheese - it's similar to a jack cheese and stringy, like string cheese!  Add guacamole and salsa and you are good to go.  Provecho!

Elote!


A popular street food in Mexico (one of my dad's favorite!), elote is corn on the cob dressed up with some tasty condiments and can be made easily at home. It is usually boiled in it’s husk then covered in a variety of toppings including salt, chili powder, butter, cheese, lemon or lime juice, mayonnaise, and sour cream. Eat it either off the cob or scraped into a cup and enjoy!

Manzanas de Tamarindo

Valentine’s Day is around the corner, and if you’re looking for a treat that doesn’t involve a box of chocolates, we have a sweet alternative!
Tamarind covered apples are a delightful snack to make for friends, family, coworkers, significant others, and more. You can wrap them in colorful plastic tied with your valentine’s favorite colored ribbon and a small note.
Also, these apples are so easy to whip up, that you can use them as a quick kids’ snack when they come home from school–and it doesn’t hurt to enjoy one for yourself!

Ingredients: (makes 10)
1 box of Zumba pica Forritos (they offer tamarind and chamoy flavors)
1 8.8 oz Miguelito Powder Mix
1 regular sized bottle of Tajin Food Seasoning
10 Green apples

Supplies:
Microwavable bowl
Microwave
Ziploc bag
Wood candy apple sticks

Steps:
1. Remove stem, and stick the wooden stick into the top of the apple
2. Melt a packet of Zumba Pica Forritos in a microwave for approx.  20 seconds until it is soft enough to be able to mold onto the apple (1 packet covers 2 apples)
3. Using your hands, mold the Zumba Pica Forritos onto the apple until completely covered - be careful not to burn yourself because it will be HOT
4. Next, pour some of the Miguelito powder and Tajin powder into the Ziploc bag, mixing them together
5. Place apple inside of Ziploc bag, and twirl around in the powder until completely covered
6. Set the apple down on a flat surface to cool

Carrot Sofrito Enchiladas

I’ve grown up eating enchiladas, making enchiladas, and ordering enchiladas, but I had never thought of having enchiladas with carrots until I stumbled upon this recipe for No Bake Vegetarian Enchiladas in the May 2013 issue of Food & Wine Magazine and was instantly captivated by the vibrant color of the cooked carrots along with the bright white cotija cheese and Mexican crema. This simple, vegetarian recipe requires shopping for less than ten ingredients and takes only 30 minutes of active prep-time, making it the perfect dish for a dinner party! Here’s how to make them:
1. MAKE THE CARROT SOFRITO Preheat the oven to 225°. In a food processor, pulse the carrots, onion and garlic until very finely chopped. Scrape the mixture into a medium bowl. Add the tomatoes to the food processor and pulse until nearly smooth.
2. In a medium, deep ovenproof skillet, heat 2 tablespoons of the olive oil until shimmering. Add the carrot mixture and a generous pinch of salt and cook over moderate heat, stirring occasionally, until softened slightly and nearly dry, 5 to 7 minutes. Add the tomato puree and cook, stirring occasionally, until most of the liquid has evaporated, 5 minutes. Stir in the remaining 6 tablespoons of olive oil. Transfer the skillet to the oven and bake for 1 1/2 hours until the carrot sofrito is very soft. Season with salt, cover and keep warm over low heat, stirring occasionally.
3. ASSEMBLE THE ENCHILADAS In a medium bowl, toss the crumbled queso fresco with the cilantro and red onion.
4. In a small skillet, heat 1/2 inch of canola oil over moderately low heat. Add 1 tortilla to the skillet and cook until just pliable, about 20 seconds. Using tongs, transfer the tortilla to a baking sheet. Repeat with the remaining tortillas.
Working quickly, roll a scant 1/4 cup of the cheese mixture in each tortilla and arrange them on a large platter, seam side down. Spoon the hot sofrito over the enchiladas and scatter the remaining cheese mixture on top; drizzle some of the Smoky Tomatillo Salsa and crema over them and serve, passing additional salsa and crema at the table.
Carly's Tip: Season carrots generously with your favorite spices!!

A Recipe for Homemade Ponche

Ponche, a delicous Mexican hot fruit punch, is always synonymous with the holidays–and though I've never actually made it myself, I've watched year after year as my mom prepares it around Christmastime. I did, however, get the recipe to make it from her, so you all can try your hand at making ponche:

What you'll need:

-1 1/2 gallons of water
-1 pound of tejocotes (small fruits that you can find at a Mexican grocery store)
-1 pound guavas
-6-8 cinnamon sticks
-2 piloncillos (a special compacted brown sugar you can find at a Mexican grocery store)
-1 small bag of tamarindo
-1 pound of sugar cane

What to Do:

1. Add the 1 1/2 gallons of water to a pot.
2. Chop the tejocotes and guavas in small pieces, and peel the tamarindo.
3. Add the chopped tejocotes, guavas, and peeled tamarindo to the pot, along with the 2 piloncillos and 1 pound of sugar cane.
4. Boil for 45 minutes to an hour.
