A Backyard Wedding Fiesta: Tacos & Paletas

When it came to planning our wedding we went the easy route.  There was no stress.  No fighting.  No bridezilla moments to speak of.  For the food we wanted something tasty that our guests would truly enjoy.  Of course, it had to be Mexa-themed.  Our amigos over at San Diego Taco Company did not disappoint.  They served up tacos, empanadas, flautas, ceviche, fruit cups and agua fresca.  It was absolutely perfect.  We ate every last morsel.  It was that good.  As for the dessert, our lovely friends from Viva Pops made us the most delicious paletas - salted caramel, mango orange pineapple and margarita.  Sooo yummy!! And, because my seƱor likes loves bundt cake, I surprised him with bundts and bundtinis from Nothing Bundt Cakes.   Like I said, we kept it simple and tasty, and our guests could't have been happier.

Let's Talk Tacos

There are so many ways to arrange this oh-so-tasty classic, and arranging a taco bar for guests to create their dream taco makes for a perfect dinner party idea. A serve-yourself table full of various fillings and condiments allows your guests to personalize their meal and makes it easy to cater to vegetarians and meat-lovers alike. Tamales for Christmas

Tamales, a delicious Mexican staple food, are created from corn dough and filled with various meats and other fillings, and differ in how they are made throughout Mexico. In Oaxaca and tropical areas of Mexico, tamales are wrapped in banana leaves, and in other parts of Mexico they are wrapped in corn husks. But no matter where or how they are made, tamales are a beloved food associated with family gatherings and special occasions.

One of those special occasions is Christmas, so we've found some recipes for a few different types of tamales for you and your family to create together (the traditional way to make them!):
