A popular street food in Mexico (one of my dad's favorite!),
elote is corn on the cob dressed up with some tasty condiments and can be made
easily at home. It is usually boiled in it’s husk then covered in a variety of
toppings including salt, chili powder, butter, cheese, lemon or lime juice,
mayonnaise, and sour cream. Eat it either off the cob or scraped into a cup and
enjoy!
