Quick and Easy Buñuelos - Baked not Fried!

Last night I went to a friend's house for dinner where she made some really amazing Mexican food. The whole meal was absolutely delicious, but what really impressed me were her super simple, no-fuss buñuelos. What are buñuelos? They are fritter of Spanish origin, typically consist of a dough that is deep fried and finished off with a sweet topping. The particular buñuelos that we had were not deep fried but baked. They were served right out of the oven, topped with a scoop of vanilla ice cream and drizzled with just a smidgen of chocolate syrup...oh so good. This recipe was so easy and absolutely scrumptious that I am going to have to make them tonight for my family. They are going to love it!


Ingredients
  • 1 package (of 2) frozen puff pastry sheets
  • 1 cup sugar
  • 1 tablespoon cinnamon
Steps
  1. Remove sheets from package and thaw at room temperature 30-40 minutes
  2. Combine sugar and cinnamon
  3. Heat oven to 375
  4. Unfold sheets and cut each into 12 even pieces
  5. Place on ungreased baking sheet and bake until puffy and golden brown 10-15 minutes
  6. Remove from oven, and toss in sugar mix just to coat slightly - serve
